Head Chef –Mr. Sayfur Rahman
Mr. Sayfur has over 37 years of culinary skills in Indian cuisine. The fascination of cooking, took him on his journey through major towns in London to work alongside many high profile restaurants. He has enhanced his array of culinary skills further by taking charge of kitchens in various top Indian restaurants in London such as Taste of India and Rawalpindil to name a few.
Currently, Mr Rahman is continuously developing new dishes unique to The Chillies, from vegetarian to fish and various other meat dishes for which he is renowned for. Staying faithful to his Bangladeshi origins, but utilising fresh produce, he creates dishes using cultures outside the Bangladeshi-Indian pact for inspiration.
In his spare time he likes honing his culinary skills apart from watching cricket and playing football. We invite you to come and dine at The Chillies and savoir some of his delights.
Ali Hussain (Rippon)- Director
Mr. Hussain started his career working for a five star hotel as a food and beverage manager. Over the span of 20 years, he has managed and worked for a number of well-known Indian restaurants in London. He has learnt from experience that fine Indian food in the UK at the moment is the best of ingredients from Britain and chefs who are on top of their game who understand how to apply the technology – how to cook the meat and bring about all the essential flavours of the spices, never overpowering the main ingredient, but supporting and enhancing the flavour through perfect spicing. Mr. Hussain’s motto is to stick to tradition, understand how spices work in food and respect basic Indian cooking techniques, but the real fun and enjoyment of the food comes from ingredients in their prime.
He has advanced training in health and safety in catering and hospitality. In his spare time he plays badminton and is an avid cricket fan.
